Besides its high organoleptic features, during the years the production of Gelateria del Gallo has been stood out for its sanitary safety. In this regard, Mr Ciro Verde - Quality Assurance Manager, carried out a self-control plan aimed to the introduction of a management system of the sanitary rules in order to improve and make more safe and transparent the products efficacy.  The company indeed wants to guarantee the quality and healthiness  of its products through suitable  decisions both on the operating and managerial plan and it makes use to HACCP basic principles and the council directive 93/43/EEC on the hygiene of foodstuffs and the legislative decree 156/97 in order to identify the possible health hazards  and the most suitable control activities.
